Y eso es lo que vamos hacer hoy, un Soufflé de queso, clásico en la cocina francesa
Vamos a necesitar harina, mantequilla y leche para hacer una bechamel, y luego queso rallado y huevos, estos últimos son el ingrediente principal de cualquier soufflé, sobre todo las claras
lo primero que haremos sera la bechamel a la que le añadiremos sal, pimienta y nuez moscada
ahora pintaremos los boles donde haremos el soufflé con mantequilla y un poco de queso
montamos ahora todas las claras, yo he utilizado 8, a punto de nieve, esto es lo mas importante, tienen que estar en su punto
añadimos 6 yemas a la bechamel
y ahora el queso rayado, unos 200gr y las claras a punto de nieve
toda esta mezcla la ponemos en los boles y estos al baño maría al horno, precalentado a 200º
yo los he tenido en el horno unos 15 minutos..............................................., antes de meterlos al horno, con la punta de un cuchillo limpiar el borde de los boles para que suban bien en el horno
y ahora, à la table à manger, que dirían los franceses, fácil ........................, verdad?
